Mama's Pumpkin Bread 

 

  Single Recipe

4                  Eggs

2/3 cups       Water

1 cup            Vegetable oil

16 oz            Pumpkin (not pumpkin pie filling)

3 Cups          Sugar

3½ Cups       Flour

2 tsp            Baking soda

1½ tsp         Salt

2 tsp            Cinnamon

2 tsp            Nutmeg

¼ tsp          Ground cloves

 

1. Beat eggs.

2. Add water, oil, and pumpkin. Mix well. 

3. Add dry ingredients; blend completely.

4. Bake in greased loaf pans

      * 2 large 8½ x 4¾ or 3 medium 7½ x 3¾ pans

      * for 1 to 1 ¼ hours at 350 degrees.

5. This recipe works well doubled and also baked in mini loaf pans or mini muffin pans [reduce baking time]

6. Test pumpkin bread to make sure it is fully cooked.

7. Let cool....eat and enjoy!
